INGREDIENTS:
- 2 cups tapioca flour
- 2 eggs
- 1/2 cup Parmesan cheese
- 1/2 cup cottage cheese
- 1/3 cup oil
- 1/3 cup + milk
- Pinch of salt (or more to taste)

- Baking mini muffin pan
3 SIMPLE STEPS:
- Measure, combine and mix all the ingredients in a bowl to a Greek yogurt consistency
- Pour in a baking mini muffin pan 2/3 full as they will rise
- Bake 350F for 25-30 minutes. Best served when warm.
VARIATIONS:
add sprouted seeds;
substitute Parmesan cheese with cottage cheese
