Healthy Brazilian Cheese Bread Balls

Brazilian Cheese Bread Balls are great to make for and with young children. They are delicious, healthy, simple and gluten-free Brazilian cheese bread, or Pão de Queijo, made with tapioca flour, cottage cheese, eggs, and olive oil.

INGREDIENTS:

  • 2 cups tapioca flour
  • 2 eggs
  • 1/2 cup Parmesan cheese
  • 1/2 cup cottage cheese
  • 1/3 cup oil
  • 1/3 cup + milk 
  • Pinch of salt (or more to taste)

TOOLS:

  • Oven
  • Baking mini muffin pan

3 SIMPLE STEPS:

  1. Measure, combine and mix all the ingredients in a bowl to a Greek yogurt consistency 
  2. Pour in a baking mini muffin pan 2/3 full as they will rise
  3. Bake  350F for 25-30 minutes. Best served when warm.

VARIATIONS:

add sprouted seeds; 

substitute Parmesan cheese with cottage cheese
